What were the aims of the assignment?
Founder Denise Tran partnered with The Culinary Edge to translate her vision for a modern Vietnamese sandwich concept into a scalable restaurant brand. The goal was to celebrate authentic Vietnamese flavors while making the food approachable for mainstream diners and building a fast-casual platform capable of supporting multi-unit growth and franchising.
How do you engage customers with the new concept?
The concept invites guests into Vietnamese cuisine through familiar formats and bold flavors. Sandwiches, bowls, and café-style beverages create clear entry points for diners new to the cuisine while still exciting guests already familiar with it. The experience balances cultural authenticity with everyday accessibility, positioning Bun Mee as a vibrant and approachable fast-casual destination.
How do you create the menu to achieve the business objectives?
The menu reinterprets traditional Vietnamese street food in a fast-casual format built for consistency and speed. Classic bánh mì sandwiches anchor the offering, supported by bowls, salads, and seasonal items. This structure preserves cultural credibility while expanding appeal and ensuring the menu performs across multiple locations and high-volume environments.
What were the major operational hurdles to overcome?
A key challenge was translating complex Vietnamese flavors into recipes that could be executed consistently in fast-casual kitchens. The concept also needed to perform across multiple formats, including neighborhood restaurants and airport locations. Operational systems had to support speed, reliability, and scalability without compromising flavor integrity.
How does the brand identity tell the story of the food?
Brand storytelling highlights the freshness, vibrancy, and bold contrasts that define Vietnamese cuisine. Messaging and menu structure emphasize bright herbs, layered flavors, and street-food inspiration. This narrative helps guests quickly understand the culinary point of view while reinforcing the brand’s connection to Vietnamese culinary traditions.
What were the business outcomes?
Bun Mee has grown from a single San Francisco restaurant into a multi-location brand operating across neighborhood and airport formats. Strong performance and a clear operational framework have supported franchising ambitions, including expansion into Manhattan beginning in 2026, positioning Bun Mee as a rising Vietnamese fast-casual brand.
