THE CHALLENGE

TCE initially partnered with Courtyard Marriott in late 2015 to provide recommendations for optimizing The Bistro, an in-hotel fast casual restaurant geared toward business travelers. In summer 2016, Courtyard Marriott re-enlisted TCE to design and develop a new positioning, menu offering, and experience for The Bistro that better aligned with Courtyard Marriott’s new brand identity.

THE SOLUTION

TCE created three unique conceptual identities for the evolution of The Bistro, which Courtyard Marriott tested in focus groups and online with consumers. The selected identity, “modern comfort,” offers contemporary twists on classic American dishes served in an energetic and welcoming all day lounge space. TCE developed the menu and recipes for over 50 new food and beverage items, including strategic plateware and serviceware recommendations.

THE BUZZ

The Bistro 2.0 menu is currently being tested in select Courtyard Marriott properties across the country. A systemwide new menu rollout is planned for fall 2017.
